Description
The Garlic of Vessalico is an ecotype of white garlic, with tunics of
color between yellow and pink. At the time of collection, the heads
more exposed to the sun they may have red streaks or spots
but they disappear almost completely within a short period.
The aroma is intense, the taste is delicate and digestibility is excellent.
The fame of this garlic is proven by the recurrence of the ancient fair,
dating back to 1760, held in Vessalico on 2 July.
Vessalico garlic is part of the Ligurian products protected by the Slow Food presidia that support small traditional productions that risk disappearing.
It is grown in the Arroscia Valley in the province of Imperia.
Vessalico garlic 55%, Wine vinegar (contains sulfites) 40%, salt, sugar, pepper, bay leaf.
Store in a cool and dry place, away from light and heat sources; after opening, cover with preserving liquid and store in the refrigerator at + 4 ° C max.
