CHARACTERISTICS Nut-based cream with a particular, unmistakable and decisive taste.
METHOD The kernels are no longer crushed in a mortar, but they are still peeled and minced with extra virgin olive oil, cheese and garlic until they become a cream.
COMBINATIONS Practically invented by the Ligurians to accompany the Pansoti, it is mainly intended for first courses such as trofie, tagliatelle and orecchiette, in rolled roasts or in preparations with stuffing.
STORAGE
Keep in a cool place. After opening, keep refrigerated.
